Salmon Spinach Lasagna


Hi there ! 
A couple of my friends requested for a recipe for the Salmon Spinach Lasagna I made on Monday, and I usually just throw everything in when I cook (and God bless, it was kinda sedap and edible haha). But anyways, here's sorta a basic yet simple way I would reckon anyone would be able to bake this Salmon Spinach Lasagna ! Also, since I'm a student, I have limited amount of money, time, resources etc so this is as simple as it can get :)

Servings : 2-3 people (depending on your appetite!)

For the Lasagna
- Bake the Lasagna Sheets in boiling water for 8-10 minutes
- Be sure to stir it all the time, and pour in a little bit of olive oil
- Set aside the Lasagna Sheets in cold water 

For the Salmon
- Heat up some olive oil
- Cook about a teaspoon or two teaspoons of garlic
- Chuck the salmon in and cook it with herbs, black pepper and salt
(I used mixed herbs cause that's the only herb I have in my cupboard lols)
And set it aside !

For the Spinach + White Sauce 
- Grab as much spinach as you'd like (I used about 400 grams)
- Chop some garlic and red onions (or any onions really)
- Cook the garlic and onions, then throw in the spinach into the pan with some herbs
- Once it's cooked, set it aside to cool down and chop the spinach into smaller pieces 

Whilst waiting for the spinach to cool down, you can make your REALLY SIMPLE white sauce !
- Mix in 75ml of Double Cream and 150ml of Creme Fraiche into a mixing bowl (I used a whisk at this stage just to mix them well) 
- Beat an egg in 
- Add loads of cheese into the mixture (I used a little bit of Mozarella and loads of Cheddar)
- Add a bit of butter in (possibly a table spoon) and salt 
And you're kinda done with the white sauce ! 

Mix the spinach into the white sauce, and we're good to go ! 

Finally,
- assemble all the mixes together (it took me only about 15 minutes-20 minutes to prepare for all 3 mixtures)
- I started off with a pasta base, then the white sauce, then I threw in the salmon pieces on every base  
And you're done !

Just put it in the preheated oven for about 20 minutes at 180 degrees or 160 degrees fan oven uncovered and you should get a nice golden layer at the top


I think this recipe is really easy and can the ingredients can be substituted with other ingredients easily. And I kinda did this Lasagna based on a mix of about 5 different recipes posted online.

The Right Weight


So, let's get straight to the point.
Since I've been studying in the UK, I've managed to gain atleast 7kgs. I have always been about 46-48kgs in KL but now its usually 53-55kgs. Which is great, really, cause I just looooooove food :)
But there's been a bit of dilemma recently, honestly. 

I don't quite these "love handles" and "bulging belly" I've gotten since the weight gain. Sometimes, you can even see it from the clothes I wear. Beyond that, consuming so much food drains out my energy, which slows me down on the days I have to be productive. 

So, I've switched to healthy good food and consuming moderately, which has been helping me with my blemishes and having more productive days. But it also means that my weight is now about 50-51kgs. Which is ideal but I'm afraid if I go below 50kgs again, cause then I wouldn't be able to donate blood, which is something that I'm trying to make as a routine every 3-4 months.

Don't get me wrong, I don't make a hug deal about trying to impress society about how I look or social pressure, its more about how I feel about myself, and I just really wanna be fit and clean (in and out) so yeah.

Guess I have to maintain or gain weight and work out more just to make sure these fats doesn't suddenly pop somewhere else, I hope. Hmmm.

The Skinny Bakers will be on television !


On my 21st birthday last year, the 1st of August 2015, we decided to make it happen and started selling our cookies at our first event in Kota Damansara.
And a few months later on my mother's birthday, 3rd February of 2016, we were told that we are going to be on television !
No words could describe how happy and excited I got when I heard the news ! 
Ya Allah, thank you :) 
Also, much thanks to Sonia as well for being our host !
And my mum for being such a great Business Partner / COO / CEO / Driver / Mum...everything lahhh 

Wish I was there to stand next to my mum but when I saw her smile in the picture below, I felt such content and happiness. Nothing mattered more to me than to make my mum happy, and am glad that I decided to go with my mum's idea of starting a business together :)
I guess what they said was true, that it all comes to niat (intentions). And my niat upon starting this business was to make my mum happy and my parents proud. Also, a personal goal has always been to start a business before 25 y'old, so yeah. Alhamdulillah.


Nobody said starting a business was going to be easy. But it seemed to have grown so far in such a small time frame, less than a year ! 

It was only months ago though. I first started approaching The Whisk cafe, being persistent with them and passing them testers. Then when I started my legal internship with ZulRafique & Partners, I told myself, I was not going to stop approaching cafes. I'll bring a box of cookie jars as samples into my car to work and approached cafes after work, so sometimes I'll be back home at about 10PM. My amazing mum would be busy baking the cookies whilst I was doing the usual 9-5PM. Then on the weekends, me and mum would go 'cafe-hunting' together. 

Oh I will always remember the times I got lost in KL driving after work. I didn't have mobile data since my stay in KL was only a couple of months over Summer Break. I got so lost driving that I even got from Central KL to Ampang just to get back to Subang Jaya and arrived home at 11.30PM. Came back home and told mum the exhausting story and she went like 'Ya Allaaaaah', just cause she's an expert KL driver (Also cause I missed our family dinner that night). Luckily I had extra cookie jars that I could eat just cause I was stressed up driving phewwww (hehehe, so now you know where most of the samples went to ma, my tummy). Although, in my defence it was just one jar, I think. Hahaha.

And the times I checked my mum's handbag just to make sure she had a jar of samples in her bag every time before she heads out, just cause I carry a jar of cookies everywhere I go. Mum would check up on me as well, cause you'll never know when opportunity comes riight ? Hehehe

Anyways, back to the title of the post, yes, we will be on television insyaAllah, in a month's time.
